Turkey stuffed cabbage leaves

Definitely in my top ten comfort food of all time.  My grand mother makes some incredible stuffed cabbage leaves but this isn’t her recipe.  This is the feel good recipe I made a few weeks ago when turkey is what was left at the grocery.  What started as fun experiment turned out to be amazing and I ate these bad boys in three days!

My initial goal was to freeze some but they didn’t make it to the freezer.  Looks like I’ll be making a new batch very soon.

Unicorn Meat Stuffed Bell Peppers

  This is a nice recipe for all your meat lovers, vegan and vegetarian hater friends out there.

We all know a few, those people who absolutely despise tofu and would never indulge in a nice tofu anything even if their lives depended on it.  It will be able to fool any of those harsh critics and amuse them by the thought of eating unicorn meat.

Make the test, challenge one of your buddies and let’s see if they are able to taste this awful tofu they are so scared of.

Vegan “Ground Unicorn Meat”

Trying to eat less meat, sometimes it gets a little complicated because you wished you had some sort of “ground meat” type like protein but those store bought versions often contain too much salt, carrageenan or even worst, ingredients we can barely pronounced.

This is my own version for vegan “ground beef” which obviously isn’t beef but has some sort of beefy flavour although I like to call it unicorn meat since they are kind trendy right now and it always make people smile when I present them a dish made with this little concoction.  Use it pretty much like you would use ground meat, it’s perfect for taco, stuffed peppers, spaghetti sauce, lasagna and more!  Get creative, this recipe wont disappoint.

The only small detail to remember is when you shred your tofu block with your hands, make sure you keep decently big pieces or reduce the cooking time a little, if you have a lot of small pieces, so they don’t burn.

Coconut Bacon

We all love the taste of bacon but bacon doesn’t always love us…

Hopefully, there is a few “bacon like” alternatives that can help us quench our need for delicious bacon while respecting our diet!  Today, I’m presenting you a personal favourite: Coconut Bacon!  You can easily take this same recipe and use thin slices of almonds instead if you’re not a fan of coconut.  Take note that the end result might taste a slight different, there is something with the soft texture of the coconut flakes that really remind you of real bacon while almond bacon will keep a harder, crunchier texture.

Although, both version are delicious but….. my favourite is really coconut!

Healthy Chicken & Carrot Bowl

I wasn’t sure how to call this one.  Is it a soup? Is it a bowl?

Since I didn’t make a “bowl” category, this went in the soup section.  Searching for something easy to make, filling, healthy and super delicious?  …Or, like me, you just came across a BIG bag of carrot at the grocery and you need to use it asap?

The recipe calls for carrot “noodles”… to make them, use your hand grater and like if you were to remove the first layer of skin, continue grating more and more of your carrot till you arrive at the core.  Personally, I don’t use the core for “noodles” because the taste is a little too strong in my opinion but by all mean, save the planet, don’t be picky like me and use the whole thing.  *^_^*

Most pre-made spice mix that you will find at the grocery store always have too much salt of other preservatives added so I preferred to make my own mix.  Inspired by many store bought blends, I hope you’ll enjoy this recipe.  Use it just as you would any store bought mix and add the salt in your recipe.

Homemade Cajun Spice Blend

Creating my own spice blends have been such an adventure up to date and I’m proud to say that I found some pretty fun mixes that I think you guys might enjoy.  Let me know what you think about this festive Cajun spice blend!  Why am I calling it festive? well only because I added a touch of cinnamon in it.. Don’t be scared, it’s true that it’s something that we don’t usually find in cajun blends but just try it out as a dry rub on fish, seafood, chicken or even meat!  Oh and it’s also great for many type of sauces! Pulled BBQ chicken Taco

Pull-Apart, Pulled or Shredded BBQ Chicken can be eaten in so many ways… today I decided to make tacos with it but you should also try it out as a burger between a nice and fresh kaiser bun.  It’s easy, flavorful and I personally don’t know anybody who didn’t enjoy this recipe.  The sweet touch of maple syrup, fresh avocado slices and grilled bell peppers, it’s making it the best easy summer dinner or comforting winter meal.
