Poor man’s pudding (Pudding Chômeur)

This recipe got a decent amount of attention on Twitch because not only it’s super delicious… it’s also super easy to make.

Pudding chômeur (direct translation – poor man’s pudding) is a French Canadian classic dessert our grand mothers used to make in the Spring when the maple trees are dripping down their delicious sap to make maple syrup.  You can absolutely substitute the maple syrup for a more basic sugary syrup, if you don’t have any but, I don’t think you can call it “pudding chômeur” if you do that.  Neitherless to say, it will come out delicious for sure and I really hope you get to try this.

Sourdough maple sticky buns

If you’re nursing a sourdough starter, there’s always this one day where you have too much of it and, before feeding it, you have to discard some.  Since I don’t like thinking I’ve been “wasting” all this precious flour and water, this recipe is a delicious way to use your discarded starter.

There’s only one word to describe these… AMAZEBALLS.  They are drenched in maple and brown sugar and the bread texture is soft and elastic.  I really hope you’ll get a chance to try this recipe because it’s absolutely delicious and really easy to do.

Definitely one of those sweet treat worth cheating on your diet.

Maple Flavoured Green Beans

There’s been quit a bit of movements on my Instagram story lately.  Today’s #FoodieExperiment was the “Breakfast Poutine” but beside my idea being pretty good, a lot of refinement will be needed before making it a “blog post worthy” recipe.

These maple flavoured green beans is another recipe I’ve shared today and I decided to post it right away because it really is my favourite way to eat green beans.  Seriously… is there anything maple syrup cants do?!!

Spring is here! …and even if the weather over Montreal would sometimes make us believe that we’re still in January, some days are sunny and warm enough to remind us that the best of nature has yet to come.

In Quebec, it’s sugar shack season and, like a few years ago, it was time to go stuff our faces in maple deliciousness and heavy comfort food which is exactly what we did a few weeks ago.  On the opposite side of the spectrum of my first sugar shack review, the Sucrerie de la Montagne was like a refreshing and comforting trip back in time.

Cashew Fudge with a Touch of Lime

ohhh you’re gonna like this one and since it’s Valentine’s Day, this dessert is coming right in time.

Don’t worry if you already have a lot of work to be done in the kitchen for tonight, this fudge recipe is gonna take you about 5 minutes to prepare and only 30 minutes to 1 hour maximum in the freezer so you don’t have to do much and can concentrate on your main dish.

Tired of the classic chocolate fudge?  This no bake and no fuss cashew version should satisfy your palates.  Not too keen on extremely sweet desserts?  No worries, the lime juice and zest of lime is balancing the flavours perfectly.

“Gingery” Peanut Butter Melt in your Mouth Cookies

One of my most perfect cookie…

Hard and crunchy at first but them it starts melting in your mouth revealing delicate peanuts, ginger & cardamom flavours.  A nice foolproof, easy recipe for when you don’t want to break your head and have a store bought quality cookie.

How long can you last before you eat them all?  They lasted 3 days in my house and I had to fight for it because they would have been gone the first night.  Oh and did I mentioned they absorb milk PERFECTLY?  …so please, dunk them!

Coconut Bacon

We all love the taste of bacon but bacon doesn’t always love us…

Hopefully, there is a few “bacon like” alternatives that can help us quench our need for delicious bacon while respecting our diet!  Today, I’m presenting you a personal favourite: Coconut Bacon!  You can easily take this same recipe and use thin slices of almonds instead if you’re not a fan of coconut.  Take note that the end result might taste a slight different, there is something with the soft texture of the coconut flakes that really remind you of real bacon while almond bacon will keep a harder, crunchier texture.

Although, both version are delicious but….. my favourite is really coconut!

Stove top, Maple & Guinness Baked Beans…

Happy St-Patrick’s day!!  … a bit late 😛 ahah

I had some left over Guinness beers in my fridge from my mini celebration and I thought… why not creating something delicious with them!  After all, I had been craving baked beans for some time after hearing some of my friend rambling about the beans they ate at the sugar shack they went to last week end.  Since the end of the winter is near (hopefully), all the sugar shacks are starting to open.  But I haven’t made any reservations anywhere this year and I’m not sure if I’ll even be able to because of the world schedule I gave myself so instead, I’m gonna bring the sugar shack to me and indulge in these sweet, filling and delicious Guinness, Maple & Rosemary baked beans.

There is obviously a ton of different ways to make baked beans.  I like to do mine on the stove top because my sauce pans don’t go well in the oven.  Feel free to try this recipe and let me know what you think!   I sometime like to eat a full bowl of those in front of the tv (I know it’s really bad but I cant help myself) but it’s mostly served as a side for a classic egg/bacon/potatoes breakfast.  Either way it’s delicious and you just have to try them 😛

If you like Guinness beer, maple syrup and bakes beans… this is a MUST!

Fun Spring Salad with Fennel, Carrots & Apples

Even tho it’s technically spring right now, I’m looking outside my window and I don’t see it.  Last week, for our first day of Spring, we had a big snowstorm in Montreal and since it looks like we are in the middle of January.  The worst thing is, 2 weeks ago there was no more snow outside, the weather was starting to be nice and uplifting and the birds were singing.  I’m wondering how surprised those pore little birdies were when they realized that only a few days after they either woke up or came back from the south, mother nature still had a ton of snow and cold weather for them.

One thing for sure, mother nature is getting more and more erratic with the years… and I cant believe some people are still so close minded that they don’t believe in global warming.  …Ugh, ignorance like this annoyed me till no end and I feel like slapping all those people in the back of the head for having such ignorance but again, it’s not my place to do so but since this is my blog, I’m venting away lol  …sorry about that that.

On a much funner and tastier note, I decided that even if it’s not as sunny as I would have expect it today, I’m not going to let this weather gets to me and I will be celebrating the arrival of Spring anyways with some fun light and flavorful salads like this one.  It’s also part of my few posts that I’m dedicating to my contracted models who are seeking for healthy and low calories recipes to prepare because they have to go on photo shoots very soon.  I hope you’ll enjoy this fennel, carrot and green apple salad as much as I did.  It’s super easy to do, barely take any ingredients and will keep you full for quit a while.  Enjoy!

Homemade Apple Sauce

When I first moved in to my own place, one of the activities I liked the most was to create recipes to fill up an adorable blank recipe book my mom offered me to celebrate the beginning of my independence If I remember right, apple sauce is the first thing I tried to make because even if I don’t dislike the store bought version, everything is always so much better when it’s homemade right? Too bad my family never shared with me any recipe for apple sauce but like you will see, it’s so easy that it almost doesn’t deserve to have a recipe. Everybody is adds their own touch in the end but the basic of the process is universal.

What’s fun about this apple sauce is that it can be use on pretty much everything! From meat to baked goods, the tangy taste of the apple and the spicy and delicate aroma of the cardamom are a great addition to main dishes and deserts. I have a few recipes up my sleeves where I am using this versatile apple sauce that I will be sharing them with you but till then, hope you enjoy this post that bring me back in my first closet size kitchen. 🙂 Ahhhh memories 🙂
