Chicken macedoine in the Instant pot

March 25, 2020 by Ariel Leave a Comment

Hard to beat this dish in term of comfort food and so quick and easy when you’re using an Instant Pot.

This recipe could be easily converted in a stove top version if you don’t have an Instant Pot, it will only takes a little longer.

I own the 7in1 duo mini Instant pot and it’s what I used for this recipe.

Dijon & Gochujang Chicken sandwich

February 12, 2020 by Ariel Leave a Comment

This deserves to be in the #NoRecipe section even if there’s still a minor mix of flavours that needed to be written.  Too often I skip breakfast and end up making a fully loaded brunch sandwich so this was today’s.

Healthy Chicken & Carrot Bowl

April 15, 2015 by Ariel 1 Comment

FINAL1

I wasn’t sure how to call this one.  Is it a soup? Is it a bowl?

Since I didn’t make a “bowl” category, this went in the soup section.  Searching for something easy to make, filling, healthy and super delicious?  …Or, like me, you just came across a BIG bag of carrot at the grocery and you need to use it asap?

FINAL3

The recipe calls for carrot “noodles”… to make them, use your hand grater and like if you were to remove the first layer of skin, continue grating more and more of your carrot till you arrive at the core.  Personally, I don’t use the core for “noodles” because the taste is a little too strong in my opinion but by all mean, save the planet, don’t be picky like me and use the whole thing.  *^_^*

Hope you enjoy this recipe,

Bon Appétit! 🙂

Oven Baked, Almond Crusted Chicken Fingers

September 4, 2013 by Ariel 13 Comments

Almond_Crusted_Chicken_Fingers01

Let’s jazz up those good old chicken fingers with this super crunchy almond and oats crust.  Use the same crust on a  full breast, slice it and it’s perfect for a salad!  I usually prepare a pot in advance and use the crust mix when I need it.  It’s like having my own pimped out shake and bake ready to use in my pantry.  If you want to make a big batch in advance and keep it for a long time, place your mix in the fridge and use it when you need it.

I’ve also had interesting result with fish fingers using this same mixture.

Red_Pesto_Chicken_Quinoa_Soup01

Ok so on Monday we made “red pesto” chicken and we were left with a decent amount of delicious chicken and left over juices with tomatoes from the pan.  For everybody who have kept all the juices and tomatoes, like I advised on Monday, here’s what we are going to do with them.  Now the juices have been in the fridge for a day or two, time to get it out and use it to make a delicious and filling soup that will for sure please everybody and save you some precious time in the kitchen.

“Red Pesto” Roasted Chicken

August 26, 2013 by Ariel 3 Comments

RedPesto_RoastedChicken011

For a long period of my life, the idea of roasting an entire chicken scared me.  I felt intimidated by the task and was worried that if I was to miss my recipe, I would feel twice as bad because I’ll be wasting an entire bird.  What I didn’t know, is that making a finger licking good roasted chicken is actually quit easy AND the possibilities are endless once you understand the basic rules.  Today I felt like using the new “pesto” powder I had made a few days before with the fresh basil leaves growing in my garden.  I’ve also been harvesting quit a lot of fresh tomatoes from my plants and this recipe was the perfect occasion to use them.

I called this recipe “red pesto” chicken because of the prominent taste of the pesto powder and the nice red color that comes from the juicy roasted tomatoes.  I hope you’ll enjoy this recipe, make sure to keep all the  juices and left over tomatoes from the pan because in my next post, I’ll be showing you how to make a delicious and filling soup with it.

Honey, Mustard Chicken Wings with Dijon/Lime dipping sauce

May 29, 2013 by Ariel 7 Comments

Honey_Mustard_wings01

I’ve been teasing my twitter and facebook followers for a while now about a new chicken wings recipe…  The worst thing is, I have shot these photos about month ago and wrote this recipe 2 months ago but you know how I roll… I get so busy and the culinary site suffer.  It’s not because I don’t want to come here (pretty much the opposite) but I don’t always have the time and since my business took off again (thanks god) I’ve been swamped (in a good way) and every day is busier than the one before.

There is also the fact that I wanted to post other recipes before this one but I haven’t been able to get around to take photos of the more healthiest meals I have made so today I said “fuck it”  I’m posting my wing recipe and I’ll just have to deal with it! lol  The reason why I wanted to post healthier recipes is because I’m currently on “model bootcamp diet” and I don’t allow myself the juicy and delicious wings like these ones or the spicy maple chicken wings I made earlier this year.

I’m planning a lot of shootings in the upcoming weeks and months so I have to watch what I eat a bit more.  Although I call it a “model bootcamp diet”, it’s not really a diet but more a new way of life/eating.  I don’t feel like I’m stopping myself from eating what I like (beside the obvious junk food) so that’s why I don’t feel like I’m on a diet.  Plus I wanted to show you that it’s not because you watch what you eat, that you will always feel like you’re starving yourself, then get frustrated because you cant eat what you would normally eat.  I’ll get to that, I have a lot of delicious and flavorful recipes that are on the healthy side and the next time I’ll be posting something here it will be in this category. (hopefully lol)

Till then, enjoy these delicious honey and mustard wings with the flavorful dipping sauce… Ohhh just looking at the photos I’m already drooling.. you?

Pulled BBQ chicken Taco

August 5, 2012 by Ariel 3 Comments

Pull-Apart, Pulled or Shredded BBQ Chicken can be eaten in so many ways… today I decided to make tacos with it but you should also try it out as a burger between a nice and fresh kaiser bun.  It’s easy, flavorful and I personally don’t know anybody who didn’t enjoy this recipe.  The sweet touch of maple syrup, fresh avocado slices and grilled bell peppers, it’s making it the best easy summer dinner or comforting winter meal.
