My First Mini Cherry Pie with Crumble top…

These are looking pretty decent, maybe not as good as I had in my mind but I’m still very happy with the result knowing that it was my first time making a cherry pie and overall a fruit pie.  It wont be my last either, I have planned on making different versions of the cherry pie and hopefully I’ll get better at it every time.

I got to say that I had fun tweaking a bunch recipes that I found online to finally come up with this one…  Hope you enjoy the touch of maple syrup in the filling and dried mint in the crust,  I think they are adding a new dimension of flavor to the typical cherry pie you can find out there..  So try it out and let me know 😉

– INGREDIENTS –

For the Crust:

1/3 cup of margarine

1/2 teaspoon of salt

1 teaspoon of baking powder

1 cup of flour

1/2 teaspoon of dried mint

1 tablespoon of sugar

1 tablespoon of almond milk

For the Filling:

2 + 1/2 cup of fresh cherries (approx. 36 cherries)

3 tablespoon of maple syrup

1 tablespoon of brown sugar

2 teaspoon of corn starch

For the Crumble top:

1/2 cup of the crust mixture

1/4 cup of quick oats

1 tablespoon of brown sugar

1- Pre-heat your oven at 375.  Star cutting the cherries, first in half and then each half in 4 mini pieces.

2- For the crust, mix all the ingredients together with your hands till the mixture looks like little clump of sand.  Take 1/2 cup of the crust mixture OUT and take the rest to make your crust by pressing the mixture with your hands or a tart tamper (I prefer the tart tamper) at the bottom and the side of the mold (I used this one) and put in the oven for 15 minutes.

3- In a medium size pan, on the stove at medium heat, add all the ingredients for the filling and let simmer for 6-7 minutes or till the mixture is all sticky.  Remove from heat and let cool down a little.  In a mixing bowl, mix together all the crumble top ingredients.

4- Pour the filling mixture on the crust and add the crumble on top before putting it right back in your oven for 18 minutes 🙂  When all that is done let cool down a bit before jumping on it because it’s gonna be crazy hot!  Hope you like!

    These look delicious! I just bought a huge bag of cherries, and I never even thought about baking with them. I can never make them last long enough to make some delicious dessert with them. Net time, I will buy 2 big bags 😉
