Get the great taste of pesto in powder form!! Use it on pasta, fries, roasted veggies, salads and more!

– INGREDIENTS –

2 teaspoons of big sea salt

3 teaspoons of minced dried garlic

2 teaspoons of whole black peppercorns

3 teaspoons of roasted white sesame seeds

1 cup of very tightly packed cup of freshly chopped basil

1- The day before, Mix all the ingredients together and keep in an air tight container, in the fridge, overnight.

2- The next day, heat your oven at the lowest setting possible (mine is 150-170), line a parchment paper on a baking sheet and spread out a thin layer of the mixture all over the paper. Dry in the pre-heated oven for 2 to 4 hours or more if needed.

What I did, between the drying process, I moved the mixture around till it was about 80% dry. Then I brought it in my electric coffee grinder and made a powder/humid powder paste and then brought it back to the oven for the end of the drying process. Each oven work differently so don’t worry if your drying time is longer or shorter than mine.

You want to make sure to NOT put your heat on too high because you will burn the plant and change the taste your pesto powder while removing a ton of nutriments.

3- Once everything is dry, you can pass your powder in the coffee grinder again to make it even.
