This deserves to be in the #NoRecipe section even if there’s still a minor mix of flavours that needed to be written. Too often I skip breakfast and end up making a fully loaded brunch sandwich so this was today’s.
Dijon & Gochujang Chicken sandwich

Serves: 1 sandwich
Ingredients
- For the sandwich:
- 1 croissant
- baby spinach
- 1 king oyster mushroom, sliced
- old cheddar
- 40g of cold shredded chicken breast
- 1 large egg
- For the chicken salad sauce:
- 6g of chopped green onions
- 10g of Dijon mustard
- 4g of Gochujang
- 4g of olive oil
Instructions
- - On the stove top, grill the king oyster mushrooms. Then grill the egg, pop the yellow, make a flat omelette.
- - In a mixing bowl, mix all the ingredients for the chicken salad sauce together and then mix the shredded chicken in there. Reserve.
- - Assemble from the bottom layer to the top layer: baby spinach, chicken salad, thin slices of old cheddar cheese, grilled mushrooms, baby spinach and a bit of extra dijon on the top bun of the croissant.
