Ooohhh yes! If you’re like me and you LOOOOVE Mexican food, you are going to be drooling over this amazing recipe that taste just like Mexican enchiladas! I usually make a big quantity of soup without the chicken and can it in mason jars. At the last minute you can just open a jar, add chicken and there you go! …you have a perfectly healthy and delicious soup to warm you up this winter 🙂 Enjoy!
– INGREDIENT –
2 Cooked Chicken Breasts cuts in: cube, shredded… any ways you prefer
1 +1/2 teaspoon of olive oil
4 BIG fresh garlic cloves (crushed)
1/2 cup of red onion finely diced
2 tablespoon of flour
1 +1/2 cup of chicken broth
2/3 cup of milk
1 cup of strained tomato
1 +1/2 cup of carrots very finely chopped (about 2 big one)
1 cup of corn bits
1 cup of bell peppers finely chopped (mini cubes will be perfect)
1 tablespoon of chopped of fresh Coriander/Cilantro
2 teaspoons of chili powder
1 teaspoon cumin
1 teaspoon of majoram
1 teaspoon of oregano
1/4 teaspoon of cayenne pepper
4 teaspoons of lime juice
Salt and Pepper to taste
1- On the stove at medium heat, warm up the olive oil with the onions and the garlic and let it stand till the onions change color a little bit. Then add your flour and make sure you spread it well all over the onions and garlic before adding the chicken broth. Mix well to dissolve all the flour, then add the rest of the liquid (milk, strained tomato)
2- Add the rest of the ingredients and let it simmer at medium/low heat for 1 hour! Enjoy!

Little Ariel is growing so fast inside Linda (the Mrs.) that it would be scary if it were not so amazing! Perhaps our enjoying your zesty and spicy recipes will make little Ariel zesty and spicy as well but as a Dad, I’ll have to be protective of her! Perhaps you can invent some dishes fit for babies. It’ll be better than anything that comes in a jar. In any case, Linda and I (and little Ariel) thank you for your genius in the kitchen as well as everywhere else you show it!

It took me a couple weeks to have enough time to cook this soup but i had the chance today and I can say that it is delicious, the taste reminds me of a vegetable soup that my mom used to cook when I was a child.
