Summer Grilled Zucchini Salad

You have a bunch of extra Zucchini laying around?  Let me show you something simple and very tasty to do with them 🙂

– INGREDIENTS –

Sliced Zucchini

small half moon shaped white onions

For the Sauce:

Juice of 1/2 lemon

1 tablespoon + 1 teaspoon of Extra Virgin Olive Oil

1 teaspoon of dried Thyme whole

Zest of 1/2 lemon

zest of 1/4 lime

1- One day in advance, mix all the ingredients to make the sauce and let it sit in the fridge for the night.  The only reason being that the thyme pieces will get softer and spread out their flavor everywhere in the sauce.

2- At the last minute, slice your zucchini and grilled them.  Add a bit of sauce on top and some freshly ground pepper and sea salt. Enjoy!

    This meal is fantastically nice to eat, not to meaction the peperation time. Parden my french but this friken brilliant.and it goes well with a stake.next please more of the same. More. Yours truely munch £crunch.

    I think i try it in combination with the shrimps for a opener in my restaurant if i allowed to do. Looks very tasty 😉
